Thursday Tasting- Thursday, May 26, 2011, 6-8 PM

This Thursday we will be tasting the Macallan 12 year and the Famous Grouse "Black"  From 6:00 - 8:00 please come by and enjoy a dram.

Macallan 12 year
The Macallan Sherry Oak is exclusively matured for a minimum of 12 years in Spanish oak casks, handcrafted and sherry seasoned in Jerez, Spain. This delivers a classic Macallan Style, wonderfully rich in color with dried fruits, spice and chocolate orange.

Famous Grouse "Black"
The Black Grouse (Tetrao tetrix) is a rare relative of Scotland's national game bird, the Red Grouse. Similarly, The Black Grouse Blended Scotch Whisky, born out of a marriage of The Famous Grouse with Islay malt whiskies, is a breed apart. The smoky influence of the peated malts is balanced by the trademark smoothness of The Famous Grouse to create underlying hints of cocoa and spice. With a long, smoky, aromatic finish, it's hardly surprising that The Black Grouse has been listed as The Best New Scotch Blended Whisky in Jim Murray's 2008 Whisky Bible.

Sneak Preview:
Macallan 20 year,Masters of Photography, Albert Watson Edition.
Only 1000 bottles produced, only 2 made it to Texas. We got ours a few days ago.

Each batch is of a unique and of exceptional quality.

Glenfiddich 21

The Davidoff Yamasa’ wrapper is the culmination of seven generations of intensive hybridization of Criollo seed, developed specifically to take advantage of the unique characteristics of the Yamasa’ soil, producing an extraordinary leaf with a wide range of intense flavor characteristics, dark color, and oily sheen.

The Binder and Filler leaves of the Puro d’Oro consist of a mixture of premium aged Dominican tobaccos, which when combined with the Yamasa’, produce a powerful aromatic blend filed with notes of coffee and spices with a long, enjoyable finish.

Hendrick’s Gin Tasting Friday!
6:00 PM - 8:00 PM

We invite you to join us Friday, July 16th from 6pm to 8 p.m. for a tasting of the Hendrick’s Gin.

Hendrick's uses a blend of spirits produced from a Carter-Head Still (constructed in 1948), of which there are only a small number in the world, and a small pot still, originally built in 1860 by Bennett, Sons & Shears. Both have been restored to working order after being bought at auction in the 1960s by current William Grant Life President, Charles Gordon. The two stills produce strikingly different styles of gin due to their different construction and methods of distillation.

The pot still is generally referred to as the Bennett still. The still itself is quite small, which in general will allow most of the flavor characteristics of the botanicals to pass into the spirit. The still is charged with neutral spirit and the botanical recipe added to the liquid, along with some water. This is left to steep for 24 hours, which begins the process of extracting the flavor from the botanicals. The still is then heated by means of an external steam jacket to boil the liquid. As the pot begins to boil, vapor moves up the short column of the still and eventually meets the condenser, where vapors are turned back to liquid and collected. First runnings can be as high as 92% alcohol, with a gradual decrease in the strength as the distillation progresses. Once all of the alcohol is collected, the final spirit will be approximately 75% alcohol v/v. This spirit is of a heavy, oily character with a strong juniper-flavor.

In contrast, the spirit derived from the Carter-Head still is much subtler with light floral and sweet fragrances. Its method of production is quite different, with only the neutral spirit and water added to the pot of this still. All botanicals used with the Carter-Head are added to a flavor basket at the very top of the still. Rather than boiling the botanicals, which produces the strong pungent spirit of the Bennett still, the Carter-Head bathes the botanicals in the alcohol vapors only. As these rise up through the still, they enter the base of the botanicals basket. Inside, the botanicals are contained in copper baskets, which hold them together while allowing the vapors to be fully exposed. As the evaporated alcohol moves through the botanicals it efficiently extracts flavors from them, which are carried out of the basket along with the alcohol until they reach the condenser. Only the lighter, sweeter and floral flavors are able to be extracted by this method, which gives the spirit its distinctive character.

The final Hendrick's gin is a blend of these two spirits with an addition of Cucumber essence and Rose petal essence.

The Macallan Ice Ball
Who doesn’t enjoy a good, neat scotch?
Or is it a good scotch on the rocks?

The act of adding ice to single malt is considered irreverent in certain circles; and yet in others, a chilled dram is considered one of life’s simple pleasures. Looking to merge these two schools of thought, The Macallan introduces “The Perfect Serve” with the debut of The Macallan Ice Ball Press. Based on the Japanese tradition of serving hand-carved ice with ultra-premium spirits, the Ice Ball Press instantly creates a flawlessly formed sphere of ice that is an ideal complement to The Macallan’s single malt Scotch whisky.
The Macallan’s Ice Ball Press takes its cues from Japanese cocktail culture where artisans hand-carve ice balls from massive slabs to create an uninterrupted plane that cools spirits quickly and evenly. Most importantly, the ice ball melts slowly to preserve the integrity of the spirit.
